Research Reduces Ground Beef Food Safety Risks Nationwide

LUBBOCK, TX – USDA says decades of research and industry changes have sharply reduced E. coli problems associated with ground beef, offering an example of how coordinated food-safety work can reduce risk. Under Secretary for Food Safety Dr. Mindy Brashears says outbreaks still occur, but they are now far less common.

Brashears says researchers identified solutions across the production chain from farm to table, then worked with academia, industry and federal regulators to put those practices into use. She described the effort as a long-term collaboration rather than a single intervention.

The work changed how the beef industry manages one of its best-known food-safety hazards. Brashears says major E. coli outbreaks are now less likely to be associated with hamburgers than they were in earlier years.

She cautions the problem has not disappeared. E. coli can still cause outbreaks, and continued monitoring, research and prevention remain necessary across food production and handling systems.

The experience shows how applied research, industry adoption and federal oversight can combine to reduce risk while allowing production systems to continue operating.
